Carrot Cottage Cheese Wraps


Makes: 4 wraps
Ingredients
Wraps:
2 ½ cups grated carrot
1 cup cottage cheese
3 eggs
2 tsp garlic and herb/Avocado guac seasoning (I used @mingleseasoning, but you can use any seasoning you like)
Parmesan, freshly grated
Green Goddess Dressing:
2 cups thick Greek yoghurt
1 ½ cups fresh herbs (basil, dill, coriander and chives)
1 garlic clove
Juice of ¼ lemon
Sea salt and pepper, to taste
Filling:
Mayonnaise
Lettuce
Avocado, sliced
Cucumber, sliced
Tomato, sliced
Beetroot, sliced
Shredded chicken
Green goddess dressing
Parmesan, freshly grated
Method
Preheat the oven to 180°C fan forced and line a large baking tray with baking paper.
Add the grated carrot, cottage cheese, eggs and seasoning to a bowl and mix until well combined.
Spoon ½ cup portions of the mixture onto the prepared tray, spreading each into a thin, even circle. Finish with a generous grating of Parmesan.
Bake for 10–12 minutes, or until lightly golden and crisp around the edges.
Meanwhile, add all the green goddess dressing ingredients to a high-speed blender and blend until smooth and creamy. Season with salt and pepper.
Remove the wraps from the oven and allow to cool.
Spread with a little mayonnaise, then layer with lettuce, avocado, cucumber, tomato, beetroot and shredded chicken. Drizzle with the green goddess dressing and finish with freshly grated Parmesan. Wrap tightly and enjoy!
