Filo Cheeseburgers

If you love a classic cheeseburger, wait until you try this version. Golden, crispy filo pastry takes it to the next level, wrapping up a juicy beef pattie, melty cheese and a simple homemade burger sauce into one seriously delicious dinner.

Ingredients
Cheeseburgers
1 packet filo pastry
½ cup butter, melted
500g lean beef mince
1 tbsp BBQ seasoning (or your favourite seasoning)
1 tbsp olive oil
1 small white onion, thinly sliced
1 cup grated cheese
Burger pickles, sliced
Sesame seeds, to sprinkle
Burger Sauce
½ cup mayonnaise
2 tbsp tomato sauce
2 tbsp finely diced burger pickles
2 tbsp pickle juice
2 tsp dijon mustard
Salt, to taste
To Serve:
4 medium potatoes, cut into fries or wedges
Method
Preheat the oven to 200°C fan-forced. Line a baking tray with baking paper.
Toss the potatoes with a drizzle of olive oil and a generous pinch of salt. Bake for 30–35 minutes, or until golden and crispy.
Meanwhile, combine all of the burger sauce ingredients in a small bowl and set aside.
Heat a drizzle of olive oil in a frying pan over medium heat. Cook the sliced onion for 8–10 minutes, stirring occasionally, until softened and lightly caramelised. Remove from the pan.
Combine the beef mince with the BBQ seasoning and mix well. Divide into 4 equal portions and shape into burger patties.
Increase the heat to high and cook the patties for 2–3 minutes per side, until well browned on the outside but still slightly underdone in the centre. Season with salt, then top each patty with the grated cheese and set aside to melt.
Lay 2 sheets of filo pastry on your bench. Brush one half lightly with melted butter, then fold the two sheets in half. Repeat with another 2 sheets to create a second layered stack.
Place the layered filo sheets into a large ramekin or bowl to help hold their shape. Layer in the caramelised onions, sliced pickles, a spoonful of burger sauce, the cheeseburger patty and cheese, then another drizzle of burger sauce.
Fold the pastry over the filling. Fold one additional sheet of filo in half and wrap it around the parcel to fully enclose it. Brush all over with melted butter, place seam-side down on the prepared tray, and sprinkle with the sesame seeds.
Bake for 8–10 minutes, or until the pastry is crispy and golden all over.
Serve immediately with the crispy fries and any remaining burger sauce for dipping.
Notes:
Cooking the burgers until just shy of done keeps them juicy after baking.
You can use cheese slices instead of grated cheese if you prefer.
