Biscoff Rocky Road

Is it even Christmas if rocky road isn’t on the menu…not in my house. Here’s my variation which is packed full of the good stuff, including biscoff cookies 🤤

Ingredients

390g dark or milk chocolate (or a mixture of both)

5 x mini packs of lotus biscuits (10 mini biscuits)

3/4 cup red frogs, chopped

3/4 cup mini marshmallows

1/2 cup shredded coconut

Method

1. Place the chocolate in a large bowl and place in the microwave to melt in 30 second increments (or over a double boiler).

2. Roughly chop the lotus biscuits, red frogs and marshmallows and add everything to the bowl, along with the coconut, (leaving a little of each ingredient to sprinkle over the top).

3. Stir well to combine and pour into a lined loaf tin. Sprinkle each of the ingredients over the top and place into the fridge for 1-2 hours to set.

4. To gift as Christmas presents, cut into even pieces and wrap in some cellophane and tie with some Christmas ribbon.
